Jeff & I had (unfortunately) been really craving sweets. I knew we had a cake mix in the cupboard, and it was going to expire soon (gasp!), so I figured that would be a good dessert.
If only we had frosting.
Wait! We had bought six bricks of cream cheese at the store (but no bagels and no cherry Jell-o), so off I went to Pinterest to find a good cream cheese frosting recipe. I looked at a few before pinning this one:
The post, over on Our Best Bites, said that this results in frosting where you can taste the cream cheese and it's not overly sweet. I can tell you that's accurate! I did add another half cup of powdered sugar, and a smidge more vanilla, but that's it. It really does taste like spreadable cheesecake. And the recipe made so much that I have leftovers. In the fridge. And if I know what's good for me, I will put that bag in the freezer so my spoon stops finding it...
And I had all but one of the ingredients! Yeay for me!
I would have use almond extract! I LOVE almond frosting! Just something to keep in mind should I ever find the money to come to Alaska for a visit! :)
ReplyDeleteWell, I didn't have either of the extracts, so I bought the vanilla because I knew it would be more versatile.

Ya know, with that lone cake mix in your newly & nicely organized cupboard, you coulda' made cake mix cookies !!!!!!!

It was either buy vanilla extract and make frosting, or buy Cool Whip and make cake mix cookies... We already had so much cream cheese....
